Thickness: how much the pick flexes
A thin pick bends against the string, softening the attack and adding give. A thick pick transfers your stroke into the string with minimal loss. Neither is correct in the abstract — but heavy strings and low tunings need a thicker pick to stay defined, because a flexing pick loses the note before it forms.
Material: how the pick wears and sounds
Material governs surface friction, how the pick ages, and how much of your stroke survives the trip into the string. It is the spec with the least visible effect and the longest tail — you notice material over weeks, not minutes.
